Thinai Vegetable Brinji | தினை காய்கறி பிரிஞ்சி | Foxtail Millet Brinji



Ingredients :

Thinai Vegetable Brinji | தினை காய்கறி பிரிஞ்சி | Foxtail Millet Brinji

Thinai / Fortail Millet - 1 cup
Onion - 1 no (chopped)
Tomato - 2 no (chopped)
Carrot - 1 no (small, chopped)
Beans - 5 no (chopped, 1" long)
Peas - 1/4 cup
Cauliflower - 7 florets
Potato - 1 no (small, chopped)
Cloves - 3 no
Cardamom - 2 pod
Cinnamon Stick - 2 no (2" long)
Mint Leaves - 1/4 cup
Coriander Leaves - 1/4 cup (chopped)
Red Chili Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Ginger Garlic Paste - 1 tsp
Green Chili - 2 no
Curry Leaves - 1 stk
Ghee - 2 tbsp
Coconut Milk - 1 and 1/2 cup
Water - 1/2 cup
Salt to Taste.

Method :

  • Dry roast the thinai / foxtail millet in a kadai / frying pan for an minute and keep aside.

Steps To Make Thinai (Foxtail Millet) Vegetable Brinji :
  • Heat ghee in a pressure cooker pan, roast cloves, cinnamon stick and cardamom. (Image 1)
  • Add onion and saute til the onion becomes light golden color. (Image 2)
  • Add ginger garlic paste and curry leaves, saute til its raw smell leaves. (Image 3)
  • Add tomato and green chili, saute until the tomato becomes tender. (Image 4)

  • Add all vegetables (carrot, beans, cauliflower, potato and peas) and saute for about half a minute. (Image 5)
  • Add red chili powder, turmeric powder and required salt, saute til its raw smell leaves. (Image 6)
  • Add coriander leaves and mint leaves, stir well for few seconds. (Image 7)
  • Add dry roasted thinai / foxtail millet and saute for few seconds. (Image 8)

  • Pour coconut milk and water, mix well and bring to boil. (Image 9 and 10)
  • Cover the lid and cook for 1 whistle and 3min in simmer.
  • When all the steam has escaped, open the pressure cooker pan, mix well and ready to serve. (Image 11 and 12)

Serving Suggestion : Serve hot with Boiled Egg and Raita.
